Abstract
Edible film has begun to be developed as an alternative packaging that can be applied to food because it is naturally biodegradable so it is environmentally friendly and can be consumed with the coated food because it is made of materials safe for health. This study aims to make an edible film that can protect the product, to determine the effect of adding glycerol plastizier to the ratio of sodium alginate and sago strach, and to determine the best conditions based on the ratio of sodium alginate and sago starch to glycerol. The process of making edible film consists of three stages, namely sodium alginate treatment, plastizier glycerol sago strach treatment, and making edible film. The design used was a completely randomized design (CRD) with a ratio of sodium alginate : sago strach, namely 0,5:2,5 ,1:2 , 1,5:1,5 , 2:1 , 2,5:0,5 (gr/gr) and plastizier glycerol as much as 0,2 ml ; 0,4 ml ; 0,6 ml; 0,8 ml ; 1 ml. This research shows that the addition of glycerol plastizier can decrase the tensile strenght, but increase the thickness, elongation, and water vapor transmission rate. The best condition for edible films based on the Japanese Industrial Standars (JIS) in this study is the ratio of the composition of sodium alginate : strach sago flour (0.5 :2.5) and glycerol plastizier of 0,2 ml with a thickness value of 0.03 ml, the value of tensile strenght of 15.33 Mpa , percent elongation 67.1% and the value of the water vapor transmission rate of 6 g/m2/day.
