Abstract

The majority of Indonesians only consume petai seeds, while the peel is not used. Even though there are many benefits that can be obtained by utilizing petai peel. Petai peel contains 68,3-68,75% carbohydrates and 16,5-16,8% crude fiber. This research is conducted to determine the sugar mass and yield of petai peel as a result of the enzymatic hydrolysis using the Brix Refractometer. Enzymatic hydrolysis is divided into two processes, namely liquefaction with the addition of alpha-amylase enzyme at 80℃ for 1 hour and saccharification with the addition of the gluco-amylase enzyme at 60℃ for 1 hour. Petai peel was hydrolyzed using alpha-amylase and gluco-amylase enzyme catalysts with a volume ratio of 3:1, 3:2, 3:3, 3:4, 3:5 ml. The Brix refractometer is used to measure the glucose level in the petai peel as a result of hydrolysis which is expressed in %Brix. The value of %Brix is proportional to the mass of sugar and its yield. The greater the %Brix value, the greater the mass of sugar and yield obtained. The results of this research obtained that the highest sugar mass is 19.5480 grams and the yield is 130.32% with the 10,8% glucose level and 3:5 ml volume ratio enzyme.
