Abstract

Siwalan fruit is widely found in Gresik, especially Hendrosari Village. Almost all parts of this tree are useful, but still have a neglected parts. This skin pollutes, even though it can be used as an titration indicator with the presence of anthocyanins. Anthocyanins are pigments that cause red or blue colors in plants. Exctraction of anthocyanins is by maceration extraction, which is extraction without heating where the result is affected by the type of solvent and the time. This study aims to taking anthocyanin pigments in the siwalan by the method of maceration extraction so that it can find out the percentage of anthocyanin and know the best type, comparison and extraction time. The sample used comes from siwalans waste. The skin that has been cleaned is cut small pieces, dried and smoothed until it’s powder-shaped. Studies of anthocyanin pigment has different variations of solvent. Including aquades, ethanol and ethyl acetate each plus citric acid 10% with a ratio 1:1 up to 1:5 and a maceration length of 1 until 5 days. Tests showed best conditions were obtained on aquades with a ratio 1:5. The results showed that the extraction duration of 5 days has anthocyanin levels is 10,9010 mg/L.
