Abstract

Tubers as a source of starch have been known to the public only as a source of carbohydrates, until the emergence of process innovations that can process tubers into various other products, one of which is liquid sugar. Meanwhile, the need for sugar consumption in Indonesia is more than the production so that the shortage of needs is met through imports. In this study, the tuber materials used included canna, suweg, uwi, taro and gembili, besides the purpose of this study was to find the sugar content of several types of tubers with the best concentration of acid catalyst for the hydrolysis process. For the method used there are three stages, namely, starch manufacture, starch hydrolysis and also sugar content analysis using the Luff Schrool method. The results of the study showed that the highest reducing sugar content was obtained in samples of canna material with 6% acetic acid catalyst treatment at a heating time of 100 minutes with conversion results showing 2.8598%, and for the lowest sugar content results obtained in gembili samples with the addition of acetic acid catalyst was 2% with a conversion result of 0.5733%. %. These results indicate that the higher the concentration of the acid catalyst, the starch molecules that have bound water can be broken down quickly and form simpler sugar molecules.
