Abstract

urrently the consumption of crab food in Indonesia is high so that it leaves crab shell waste that accumulates so that it can damage the environment, therefore crab shell waste must be handled properly so as not to damage the environment, alternative to using crab shell waste to have efficiency and value by changing waste One of these products is used as chitosan. Chitosan itself can be used for antimicrobial, antioxidant, and waste treatment. To make chitosan, the basic ingredients contain protein so that it can be chemically processed and chitosan is obtained. The crab shell has a protein content of 10%-44%) so that the crab shell waste can be used as chitosan. The process of making chitose itself has 3 processes, namely the first stage to carry out the deproteination stage, where at this stage the crab shells are reacted with a 3N NaOH solution, a ratio of 1:10 (w/v) is reacted at a temperature of 90°C for 1 hour, the purpose of the deproteination stage is to do the deproteination. This is to remove the protein content in the crab shell material. The next stage is the demineralization stage, where at this stage after the material is mixed with 1 N HCL acid solution, a ratio of 1:7 (w/v) is reacted at 90°C for 1 hour. The purpose of doing this is to remove mineral content in the material. The last step is the deacetylation stage, where at this stage is the process of changing chitin into chitosan by adding NaOH solution. In this study, there were independent variables on the addition of NaOH concentration and changes in temperature at the deacetylation stage because this could affect the degree of deacetylation where the greater the degree of deacetylation, the more optimum chitosan to be applied. In this study, the independent variable was the addition of NaOH concentration of 30%, 40%, 50%, 60%, 70%. and a temperature of 120°C, 140°C, 160°C with a stirring speed of 400 rpm in the deacetylation stage. In this study, it was found that the synthesis of chitosan from crab shells with an optimum deacetylation degree of 89.06% at a variable concentration of 50% NaOH with a temperature of 140 degrees on stirring using a magnetic stirrer at a speed of 400 rpm for 2 hours in the deacetylation process, and this chitosan has characteristics with high levels of 5.05% water; 1.72% ash content; heavy metals (Pb 0.0009 ppm, Cd 0.0011ppm; Hg 0.0006; Arsenic 0.0051 ppm).
