Abstract

Cooked peeled tail-on (CPTO) vannamei shrimp is a processed shrimp product that is a prima donna for export. To penetrate the international market, there is a mandatory requirement, the existence of food safety guarantees (HACCP). In Indonesia, the application of HACCP must be adjusted to SNI 01-4852-1998. PT. X is a fishery company that produces CPTO vannamei shrimp. This company has implemented HACCP in its production process. However, in the production process, there are still several threats in the form of biological, physical, and chemical hazards that can harm consumers if they cannot be adequately handled. This study aims to analyze the application of HACCP in the CPTO vannamei shrimp production process and analyze the capability process of the CPTO vannamei shrimp production process at PT. X. The first objective was analyzed using the descriptive analysis method with an evaluative approach, and the second objective used capability process analysis. Based on the study results, it is known that based on the 12 points of HACCP applied by PT. X in the CPTO vannamei shrimp production process has complied with SNI 01-4852-1998. The results of the second objective, the process capability at checking the tetracycline content, were categorized as capable. In contrast, at the product temperature checking, the capability process was categorized as incapable due to the extensive data distribution.
